The procedure for determining a SPEC is as follows: By means of this SPEC procedure the customer and her supplier have a binding agreement concerning the quality of the product. During later analysis after definitive shipping and at random intervals the SPEC provides detailed chemical and organoleptic information to which the wine must comply. |
